What’s better than a fresh and tasty couscous salad that is easy to prepare? Right, nothing ;). In this post I’m going to show you an easy recipe with only a few ingredients to prepare a salad you will love – trust me.
So, first things first: Which ingredients are needed to prepare this tasty couscous salad?
For a big bowl of salad, you will need the following ingredients:
- 500g of couscous
- 2 cucumbers
- 300g of feta cheese
- 1 bag of cashew nuts, macadamias or pine nuts (optional)
- fresh mint
- 4 shallots
- some garlic
- olive oil
- Aceto Balsamico bianco
- salt & pepper
Step 1
Put the couscous into the big salad bowl you intend to use for the final salad. Boil 600ml of salted water and pour it over the couscous. Let it sit for at least 10 minutes and mix thoroughly afterwards to avoid clumps.
Step 2
Cut all the ingredients to the size you prefer. Finish with the mint so it will stay fresh! Put the cucumber, the feta and the mint aside.
Step 3
Put the shallots and the garlic in a pan and frie them with some olive oil. Take the mix out of the pan and pour 2-3 tablespoons of Aceto Balsamico bianco on top. Let it sit for 2-3 minutes afterwards.
At the same time, put the cashews in a little pot (teflon!) and let them roast for some minutes.
Step 4
Put the shallot mix, the cashews, the feta, the cucumber and the mint in the big bowl and mix everything. As a last step, season to taste with salt, pepper, olive oil and Aceto Balsamico bianco.
